From the top:
Row 1: Gems. Ordered chromatically based off of the rainbow: red, orange, yellow, green, blue, purple. Rares before greens.
Row 2: Primals and motes. Ordered by element: Earth, Wind, Shadow, Fire, Mana, Water, Life. Motes on the left, Primals on the right.
Row 3: Enchanting mats (old-world), then gear I might use in the future or for resist fights, then ore.
Row 4: Enchanting mats (new-world), then gear I might use in the future or for resist fights, then bars.
Row 5: More Arcane Dust (I have too much), then repair bots and health/mana pots.
Row 6: PVP badges, TK mana pots, and my old land mounts.
Row 7: Useless crap.
The other rows are not organized by row: I have "sections" set aside for certain stuff - a "raid crap" section, a "reputation crap" section, and so forth.
On the whole, rather organized. :)

Oooh I like the chromatic gems.
The herbs in my two herb bags are arranged alphabetically. Other than that and the way I strive to keep all my token-like stuff in one spot, my bank is a complete mess =P
Yeah, I was staring at my gems and thinking "I need a way to organize these. Hrm... Red... orange... wait a second, isn't this ROY G BIV? Minus the I?" *shuffle around* "holy crap"
